Winter Fruit Brownie Cobbler

What’s a brownie cobbler you ask? Brownie over fruit.

Inspired by Nadiya Bakes on Netflix, I made a few simplifications that turned this into simple and yummy winter dessert.

Brownie Cobbler

Ingredients
1 16oz pkg of frozen peaches (skinned, pitted and sliced)
1 pint fresh blueberries
1 lemon
¼ cup sugar
1-2 T flour
¾ cup (1.5 sticks) soft butter
¾ cup sugar
3 eggs
Just shy of 1c flour + 2t baking powder
Heaping ¼ cup cocoa powder
½ cup chocolate chips (I used a mix of milk chocolate and semi sweet)

Directions
1. Pre-heat oven to 350º.
2. Defrost peaches. This would be an amazing recipe with fresh peaches, by the way.
3. Melt a little bit of butter in a pie pan to grease it all over.
4. Add in the peaches and blueberries. Coat with sugar and flour. Toss.
5. Sprinkle the zest of 1 lemon throughout.
6. In a separate bowl, combine the soft butter, sugar and eggs. Whisk until smooth.
7. Add flour, baking powder and cocoa. Stir until fully combined into a thick cake batter.
8. Stir in chocolate chips.
9. Using a large spoon or an ice cream scoop, dollop the brownie batter over the top of the fruit.
10. Sprinkle the top with salt and bake for 35 min.

Serve warm with vanilla ice cream.
